Cooking with a charcoal grill can provide a flavor that isn’t found when cooking with seemingly more modern gas grills. A good charcoal grill will give the meat you cook a classic BBQ flavor. Charcoal grills come in many different styles and the one that is right for you will depend of exactly what you are trying do to. You can find grills that are portable and great for a picnic, right on up in size to large cooking pits built in backyards made of brick and cement.
       
What kind of charcoal grill is right for you? You need to think of exactly what you want it for. It is important to consider if portability is important, it is if you intend to take the grill with you on picnics or camping. You will also need to consider how much food you are going to need to be cooking at any time. The small grill that is easy to toss into the trunk may not serve you very well if you need to cook for five people. Consider the cooking area the charcoal grill you are considering will provide.

When cooking with charcoal grill safety is a major concern. The most important part of the grill in this respect are the legs. If the legs are not sufficient or are unsafe the whole grill will tip over. When a charcoal grill falls over it throws its load of extremely hot coals. Check to be sure that the legs of any grill you are considering buying has very sturdy legs that won’t allow the grill to fall.

In addition to good legs some charcoal grills will provide a water reservoir that can be used to douse some or all of the coals if the heat becomes too much. Even if your grill doesn’t have that feature you should keep a metal bucket of water around for dousing the coals when you have finished cooking. Let coals cool down first then you need to dump the coals into the water slowly, watch out for the steam that may be produced. Don’t throw the water on the coals that will make a large mess.

Once you have your charcoal grill all picked out you will need to buy charcoal when you intend to use it. The coal is available at most supermarkets and hardware stores and is not at all expensive. In order to get the coal burning you will need to buy some lighter fluid. The coals are placed in the grill and stacked in a pyramid. Once stacked they are then doused in lighter fluid, after allowing a second for the fluid to soak into the pile it can be set ablaze. Allow the coal to get burning red hot, spread it around the grill and then enjoy cooking your dinner.

Another way is to completely close off your grill and deny the fire oxygen. As soon as the grill is cold, or cold enough not to burn you, you will want to clean the grill. Leaving the grill dirty for any amount of time will cause the buildup to become hard, and may make it harder to remove. Use a wire brush to clean off the surface areas of your grill, and then spray cooking oil on the surface. Take the racks off and clean them with dishwashing soap. Dawn or other brands that have degreasers work best. Rinse the racks off, and replace them in the grill.

Natural gas grills are machines that operate on natural gas fuels, such compressed gas, a fossil fuel with methane as its active element. These natural gas grills come in various sizes and shapes, and display a wide array of features, depending on the precise make.

The main function of the natural gas grill is to cook food, such as meat, usually outside but sometimes inside. Food is cooked either directly by a gas-flame or through heat-grilling elements that emanate the necessary heat.

Like the charcoal grill, natural gas grills are mainly used for picnics, barbeques, wedding, and other outside celebratory occurreneces. These kinds of natural gas grills can either be sitting (made of brick and mortar) or have wheels on one end for mobility, as well as either open, nut usually with a raised lid having a small window for observation.

Other possible aspects on the outside natural gas grill are: cooking utensils, a food preparation counter (made of finished wood and either reclining or permanently suspended), temperature knobs, condiment receptacles, and supply shelves (adjustable or stationary) situated underneath the grill.

Natural gas grills that are positioned indoors vary from simple home stoves (although many current stoves in the domestic setting are now electric) to vast industrial restaurant grills. Natural gas grills in the home usually consist of anywhere from four to eight range-top burners, each having round or square metal grill pieces, all located over a stove with adjustable shelving, which, in turn, is located over a small broiler. Some modern indoor grills (i. e. stoves) have roasters that jut out over the range-top at about eye-level.

The industrial-sized natural gas grills have multiple or broad cooking spaces, several rows of temperature knobs, all located under large air vents. Some current restaurant natural gas grills no longer have grill-tops, per se; instead some of these grills have simple metal tops that can become quite hot when ready for cooking.

Many natural gas grills are intended for conversion to account for either one gas source or another, depending on preference and necessity. For those individuals who wish not to expend energy using natural gas (and thus hype up the gas bill), natural gas grills can be modified to operate on propane or even coal.

Natural gas grills are nifty contraptions to use and usually produce mouth-watering delights to sate the appetite, but they can also be dangerous and even life-threatening without appropriate training and knowledge. So always use exactly as the manufacturer advises.

Summer is here and the steaks are ready to grill, the only problem is that you don’t know exactly what type of barbeque grill to buy. There are many questions that need to be asked when buying a grill. Things such as cost, ease of use, other uses besides grilling, flavor and portability should be considered. The most important item in this list depends on what you want. This article looks in detail at the different categories and makes a judgment on which grills would be best in that category, charcoal, propane, natural gas or smokers.

Cost

If cost is the main factor, the grill to go for is charcoal. They start at $15.00 for a small, basic unit and only $30.00 for a standard 22" kettle grill. Propane grills are the next lowest in price, starting at around $100.00 for a basic unit. A small smoker starts at around $130.00. Since natural gas grills are supposed to be hooked to a home’s gas line, they tend to be larger units, and more expensive starting around $300.00. They now have dual fuel grills as well that use natural gas most of the time but can also use propane; these are the most expensive with an asking price of $450.00 up.

Ease of Use

The easiest grill to use is probably the natural gas grill. It is hooked to your homes natural gas line and therefore doesn’t require you to buy large propane tanks on a regular basis. Getting a grill that has a battery powered or electric starter makes things even easier. Propane is probably the next easiest to use since there are no charcoal briquettes or wood chips to worry about. While it seems that a larger grill is a better grill, remember that larger also means a larger area to clean.

Natural gas or propane grills can offer additional cook spaces that a charcoal or smoker unit cannot. If you plan to cook full meals on your grill, gas burners and a warming tray come in handy. A rotisserie option may also be important to you depending on what you want to grill.

Flavor

If flavor is the most important item on your list, a smoker or a charcoal grill should be your first priority. Smokers are meant to slow cook over time and impart a smoky flavor to meats. You can choose the type of wood to smoke that will give you the flavor you are looking for. The only problem with a smoker is when you want a quick pork chop or hamburger, it isn’t so quick. Consider a gas grill for quicker cook meals and a smoker when you really want to impress the neighbors. Charcoal is the next best in the flavor department with no gas undertone. Gas grills can also impart a good grilled flavor, and now many gas grills have a smoker option on them.

Portability

When portability is the most imporant requirement, propane is the way to go. Charcoal grills run a close second. Small propane tanks make it easy to take your grill camping or to a tailgate party and you aren’t left wondering where to put the smoldering coals. Charcoal can work and there are several small portable units available; just make sure you have a plan for what to do with the used briquettes.

Camping is a great source of BBQ recipe inspiration and the European tour brings together some simple traditional ways of cooking that bring beautiful flavors together.

It won’t be long before school’s out and the summer holidays are approaching. My kids are already packing the RV, we’re not even going for another two weeks but I can’t dampen their spirits.

I’ve still got a good few days left of work so I can’t afford to let myself go yet but just as I see the excitement in the kids’ eyes I know that I’ll be the same once I get the portable grill out of the garage.

I love to camp in Europe not just because of the freedom to go anywhere but also because of the myriad of interesting people that I meet on the way. Walk around the campsite anytime after 1.00pm and you’ll start to see the smoke rising as the families gather for a lunchtime cookout. Provided I prefix my introduction with a polite "Bon Appetite" or "Buen Provecho" I can usually get to have a recce, see what’s cooking and how they’re doing it and the best bit of course is when the complement is returned and they come over to see what I’m cooking.

There has been many a time when these friendly exchanges become more competitive and a small portion of whatever has been cooked is brought over to my pitch for sampling. Of course I have to reciprocate! Neither party can speak the other’s lingo so the international language of Europe is once again food - and barbecue food to boot.

What better way to pick up some free smoker recipes than wandering around the campsite? It’s also fascinating to see just how simple some of the flavorings are.

Grilling recipes

In Italy for example, meat (generally beef or lamb) is liberally sprinkled with salt and pepper, cooked on the grill until pink and then served up with a traditional balsamic vinaigrette and lemons.

The meat should only be seasoned on one side and don’t be tempted to turn it too frequently. You want the meat to cook at a good temperature to mobilize the natural sugars and if you turn it too frequently the meat simply doesn’t get up to temperature. Likewise the seasoning "protects" the meat so again one side not seasoned will get up to a higher temperature and so bring out more of the natural flavor.

For the balsamic vinaigrette it’s just 4 parts extra virgin olive oil to one part balsamic vinegar, give it a good stir (to create and emulsion) and drizzle over the sliced meat. It’s so simple but so effective.

Another variation of simple traditional food that’s great for the barbecue grill is Greek style. Diced lamb or pork in a marinade bowl with olive oil, the juice of one lemon and a sprinkling of dried oregano, leave it for an hour and then thread onto skewers. Ten minutes on the grill and pop it into a pita bread with salad and tzaziki.

For the Tzaziki:
1 medium cucumber peeled and finely chopped
225ml or pint yoghurt
2 cloves crushed garlic
1 tablespoon olive oil
1 teaspoon vinegar
teaspoon salt

Just mix all the ingredients together and refrigerate for at least an hour to let the flavors come together.

Simple flavors, fresh meats and that’s all there is to it. The European camping tour really has produced some fantastic BBQ Recipes and I hope that this year will be no exception.

Brinkmann manufactures the Charmglow gas grills for Home Depot who owns the Charmglow name. Thus this grill can only be found at Home Depot. However Brinkmann itself has a nice line of gas grills.

This is a well built unit that sells for around $300. It’s nice and heavy and is build to last and you get a whopping 45,000 BTU on a 456 cooking area. It’s great value for the money.

And of course there are pros and cons to any grill. The pros include heavy duty cooking grates and burners. A nice BTU and cooking area size, a self igniter, and a removable drip pan.

The cons include a card that is held together with screws rather than welded, a porcelain enamel coating that needs more care, and an aluminum construction rather than stainless.

You get a total of 45,000 BTUs presented with three 15,000 BTU porcelain enamel cast burners, plus you get an additional 12,000 BTU from the brass side burner. There are three independent igniters for each of the burners which is a nice feature. The vented hood releases excess heat.

For under $300 this grill is a good buy. There are few other grills on the market that will give you as much cooking power or as many features for that amount of money. And although the aluminum frame may not last as long as stainless it’s been used for years and has a great track record for durability.

Engrail also produces grills for Home Depot under the Charmglow name. Their grills are stainless with control panels, front cabinet doors, hood sections, and they also have better burners and grates. Of course these stainless Charmglow grills can’t be purchased for the price of the level entry one.

There are a few Charmglow gas grills to choose from. If you are looking for the grill of all grills the Charmglow Ducane 3 burner stainless steel grill is a must have. It’s bright, shine, big, and beautiful. It has all kinds of features to get your attention.

It comes with heavy duty cooking grates that are welded, expansive cooking areas that is a whopping 624 square inches. The three stainless burners provide 36,000 BTU and the side burner gives you another 12,000 BTU. It comes with a split fork rotisserie that is complete with infrared burner and motor. But be prepared to get the checkbook out as this grill comes in around $1500.

And if you are looking for a great buy this Quickset 40,000 BTU gas grill costs less than $200 and provides you with 680 square inches of cooking space. The EvenFlame system means even consistent heat for the perfect cooking service. It also has an 8000 BTU side burner which is very handy.

Charmglow Gas Grills have some great choices but don’t forget there are plenty of great buys online too. With so may quality grill manufacturers it won’t take you long to find that perfect grill. Then all that’s left is some great cooking.

You may have heard about infrared technology used in restaurant grills and also available on some models of propane stainless steel gas grills and wondered what it is and how it works. It’s pretty easy to find a propane stainless steel gas grill with infrared, though, especially with infrared rotisserie attachments, and manufacturers have made an effort to explain the technology in layman’s terms.

A propane stainless steel gas grill with infrared has one, some or all of its burners that work to superheat a ceramic tile. This super heating process causes the tile to emit infrared radiation that is distributed evenly to cook the food. The temperatures reached are much higher than the temperatures of conventional gas grills or charcoal grills.

Traditional grills use heated air to cook; infrared radiation cooks the food directly. A propane stainless steel gas grill with infrared technology cooks food by searing it; the high heat seals in the meat’s natural juices and reduces the cooking time, which also contributes to retaining the juiciness of the grilled food.

A few users have been disappointed to find that cooking meat to temperatures other than medium rare to rare is a little tougher as infrared sears the meat quickly and isn’t really suited to the longer times necessary to cook meat to well done.

New technology and wider availability have made finding a propane stainless steel gas grill with infrared at a reasonable price possible, adding another option to the variety of grilling options.
