The infrared system results in such high temperatures that a novice chef may serve a few well-done meals before learning to adjust cooking times. A few users have been disappointed to find that cooking meat to temperatures other than medium rare to rare is a little tougher as infrared sears the meat quickly and isn’t really suited to the longer times necessary to cook meat to well done.
